About

An immersive Omakase experience awaits at Kappo Shunsui, the two-time awardee of The Michelin Plate Singapore.

Helmed by Chef Shimuta “Shim” Kunihiko, the last apprentice of legendary Kyoto chef Hirata Tasaku, Kappo Shunsui is a contemporary Kappo restaurant that was awarded The MICHELIN Plate for two consecutive years. Moving to a new location in 2021, the exclusive Kappo-style restaurant houses just 13 seats, each centred around an island stage. Chef Shim captivates diners with a theatrical display of his culinary showmanship, engaging the five senses to create an immersive dining experience.

The name Shunsui is derived from the words 旬 Shun" (Japanese for !season") and 水 Sui" (which means !water" in Japanese), representing the use of fresh, seasonal produce direct from Japan that are featured in multi-course omakase menus. Delicate antique tableware set the stage for each thoughtfully presented dish, showcasing premium ingredients at the height of their natural beauty.

Chef

Born in the countryside of Fukuoka Prefecture in Kyushu, Shimuta “Shim” Kunihiko grew up amidst a beautiful backdrop of paddy fields, rivers, and mountains. This closeness to nature cultivated an innate appreciation for seasonal ingredients, which translated to an interest in the culinary arts.

Chef Shim’s culinary career began at the age of 20, where he found himself a discipleship under legendary Kyoto chef Hirata Tasaku, the then Chef-Owner of MICHELIN-starred Kodaiji Kanjin. He trained under the Master Craftsman for 10 years, learning the different aspects of traditional Kyoto-style cuisine, but also studying his master’s unique and creative approach to cooking.

At Kappo Shunsui, he prepares each dish with a theatrical display of his culinary skills, engaging guests and stimulating their five senses for an immersive omakase experience that is far from the ordinary. Designed to create lasting memories, the experience of the meal goes beyond just the food
